Knuckle of pork, pease pudding, Sauerkraut

 

Ingredients

First I made sure the pork meat is clean and, therefore, washed it under cold running water. I put a bigger pot onto the oven and switched it on.

 

When the pot was a bit hot yet I stood the meat into it, turned it around after a while, waited a couple of minutes and added water.   

 

Added a bay leaf, some whole peppercorns and juniper berries. This cooked longer than a hour.

 

I added the pea water out of the glass and  the sauerkraut at the closed end of cooking. Rubed a pealed, raw potato in when the Kraut was done.

 

In an other pot put in the bacon and the onions afterwards, the sweet cream plus. Mixed it well and strew in some nutmeg powder.

 

The dish is said to have 2 Billion calories and was very tasty.

P.S.
